shrimp salad with spicy citrus dressing

i have a citrus infatuation this week … and a spicy infatuation.

being early in the new year and summer time in australia, i am craving nothing more than fresh ingredients for breakfast, lunch and dinner. fruit, vegetables and seafood are all extremely high on my wish list for dinnertime at the moment.

knowing that our fridge was stocked with fresh chili and citrus, i went for a short stroll down to buy myself some fresh prawns from the fish markets.

this recipe actually came to me when i was having my freezing cold shower. i was vigorously washing my hair with my new orange scented shampoo and the citrus smell sent my taste buds on a journey that lead to this exact recipe. yes, my inspiration comes from the strangest places.

shrimp salad with spicy citrus dressing

serves four

ingredients:

dressing:-

1 tbsp sambal oelek (any chili sauce)

1 fresh lime, juiced

1 fresh orange, juiced

1 fresh lemon, juiced

1 cup coriander, diced

3 stalks shallot, diced

salad:-

32 fresh cooked shrimp (king prawns), shelled and deveined

2 mango, diced

2 ear corn, pre steamed & removed from cob

1 red capsicum, julienne

4 cups baby spinach, washed and steams removed

salt and fresh ground pepper to taste

directions:

in a bowl, whisk the sambal oelek with the lemon juice, lime juice, orange juice and coriander.

in individual bowls, layer baby spinach, corn, mango, capsicum & shrimp.

pour on the dressing & toss.
