have you ever bought a salad from the supermarket in a jar for dinner & thought to yourself, i could easily make that myself? i know i most certainly have, on many various occasions. i have definitely looked at the back of a container & thought to myself, i should be making this myself.
this salad is my “i should make this at home” dish.
the best part about making your own salad would have to be the ability to control exactly what goes into the dish. having control over the amount of each ingredient & being able to add more of a selected flavour that excites your taste buds.
this salad is bitter, tart & fresh. it is not for the faint hearted because this salad does have a bite, the raw vegetables are crunchy & the coriander is plentiful.
lentil & coriander salad
serves two
ingredients:
2 cups lentils, drained
1 spanish onion, diced
1 red capsicum, diced
2 lemons, juiced
1 bunch coriander, diced
pepper of taste
directions:
combine lentils, onion, capsicum, coriander. stir in lemon juice, slowly to taste. add pepper to taste.
i served my salad under a fresh piece of oven roasted salmon that i did cooked a foil pouch with lemon juice & coriander for 25 minutes. it was summer fresh & thankfully, a very light dish.
