picture this: being stuck inside and having a massive foodie craving.
technically, i was not stuck inside but i was unwell and bed had become my best friend. i was getting used to just pjs and bed hair which meant that getting dressed took me awhile. i was not attractive.
i solved my problem by taking a quick walk down to my local mad mex. luckily my craving was resolved by surrendering fifteen minutes of my time and $7.90 of my money. upon arrival at mad mex, i studied the menu and ordered a small vegetarian burrito with black beans. corn. rice. lettuce. tomato. eggplant. zucchini. mushroom. fajita mix. guacamole – nice and simple.
on the stroll home, my mind begin thinking about a recreation of the burrito that i could make myself at home. having a mad mex within walking distance would be far too dangerous if i couldn’t come up with an equally incredible dish at home.
vegetable black beans
ingredients:
2 tbsp olive oil
1/2 cup onion, diced
1/4 cup green capsicum, diced
2 cloves garlic, minced
2 cups black beans, drained (i used canned)
1 cup corn, pre steamed & removed from cob
1 tbsp apple cider vinegar
directions:
heat oil in medium saucepan over medium heat.
add onion, capsicum, garlic; cook until tender, about 8-10 minutes.
stir in remaining ingredients & allow to simmer for 5-7 minutes.
serve over rice. add lettuce. tomato. avocado and a taco shell.
