after not having any success with sleeping in hospital due to all the machines BEEPING, i came home on tuesday mid-morning & slept, for hours on end.
i was offered cold eggs, bacon & toast in hospital but i could not eat it, i’ve never seen eggs like those before. thankfully, i opted to wait for a home cooked meal.
after my nap, oh sweet nap, i got out off bed. with my pjs on & a dvd ready to play, i decided to throw together an easy favourite for lunch. the easiest option would have been vegemite on toast but because i was caving eggs, i figured that i could have my eggs & empty the fridge too.
baked eggs it was. the best thing about baked eggs would have to be their ability to be adapted. as long as you have 2 eggs & a small baking dish, then you are right to go. you simply chop ingredients, let your oven cook it all together then you enjoy it piping hot with toast … in your pajamas.
baked eggs
adapted from needs more sugar
ingredients:
130g tin of baked beans
2 eggs, room temperature
3 mushrooms, diced
1/2 capsicum, diced
3 cherry tomatoes, halved
1/4 spanish onion
directions:
preheat the oven to 200 degrees.
layer mushrooms, spanish onion & capsicum around bottom & edge of dish.
empty tin of baked beans in the middle of the dish.
add cherry tomatoes, seeds down into the beans.
crack egg on top of everything & shake to disperse.
bake in oven for 20-25 minutes or until the egg whites appear set.
