i tried something different this morning.

i made a bake-in the oven, with ingredients i don’t normally use in the morning. heck, i whisked & i mixed … i don’t normally do that, i’m quite prone to select simple in the am.

this recipe comes from ashley & was adapted by me because i don’t have a kitchen as well stocked as ashley. my kitchen is so under stocked that i had to borrow a few ramekins from martyna, having a blogger as a neighbor is extremely handy.

Buckwheat Bake

recipe loosely adapted from edible perspective

Serves 1 person

Ingredients:

1/3c raw buckwheat flour

1T chia seeds

2T milk

1/2 mashed banana

2 large eggs

1t cinnamon

1t vanilla extract

1/4t baking powder

Directions:

preheat your oven to 170

grease a 4-5” oven safe bowl, really well. [I use a small ramekin]

in a bowl, mash the banana until wet.

whisk in eggs, milk, and vanilla.

mix in buckwheat flour, baking powder, cinnamon, and chia seeds.

pour into greased bowl and bake for 30min.  it will be cracked and brown on top.  the toothpick test method will work here.  do not overcook!
