Christmas Chili Prawns
recipe from our friend sharon.
serves 6 people
Ingredients:
1.5 kgs raw prawns/shrimp, peeled & deveined
1/4 cup olive oil
1 tbsp balsamic vinegar
2 garlic cloves, crushed
1 lemon, juiced
1/3 cup white wine
3 tsp cumin
3 tsp paprika
1 tsp of hot sauce
1 small red pepper, diced
1/2 cup parsley, finely chopped parsley
1 pineapple
salt & pepper to taste
Directions:
wash the shrimp and pat dry, removing the tails.
in a medium sized bowl, whisk together balsamic vinegar, garlic, small red pepper, lemon, wine, cumin, paprika, hot sauce & parsley.
add the prawns/shrimp to the bowl and toss to coat with sauce & marinate for an hour.
cook the prawns/shrimp for a minute or two until done, sprinkle with salt while cooking.
when cooked serve on a bed on baby spinach salad & serve with fresh pineapple slices
