seeing as my last two posts contained only pumpkins, it would appear that my blog has become a rather boring place to be. i mean seriously, this isn’t good.
it’s the weekend, i threw blogging to the wind. i photographed but haven’t (until now) blogged. this means your in store for a highlight post containing the exciting parts of my last two days!
there has been coffee, oh boy, lots of delicious coffee.

on pumpkin carving night, we had mexican food. gina threw together a feast (of sorts) in her kitchen. 
i brought corn bread.
adapted from this recipe.
Ingredients
Dry
3/4 cup corn meal
1 cup of gluten free plain flour
2 tsp baking powder
Wet
1 1/2 cup hot water
2 tbsp honey
1 tbsp apple cider vinegar
Directions
In a bowl, combine the dry ingredients.
In a second bowl, combine the wet ingredients.
Spray small iron skillet or muffin tin with extra virgin olive oil.
Mix wet ingredients well until honey is dissolved.
Add to dry ingredients. Mix quickly and pour into skillet or tins.
Bake 20 minutes in 180/350 degree oven. Let cool 5-10 minutes.
gina created an excellent bean & chicken dish. it was a bean & tomato dish thrown together that turned out incredibly well.
i made a wrap with salad & avocado, tomato plus a large amount of gina’s bean creation. 
i’m not going to name this cafe because i won’t be returning due to a long wait & a waiter that wasn’t so nice.

that right there is: scrambled egg whites, roasted tomatoes, smoked salmon, baked beans, mushrooms & sourdough toast.

I hope that at least the food at that cafe was nice, even if the waiter wasn’t.
